The men from Argentina fought back form 3-24 down to win 34-33 in a thrilling match, but were taken aback somewhat with the pace of the game.
"Despite the preparation we had, this was something else," said Pérez.
"We had an idea of what Super Rugby would be like, but look what happened today [Friday].
"Winning helps a lot, but we need to learn from this game, especially the speed with which the game is played in this tournament. We also need to work on our transition from defence to attack.
"There will be time for that, but for now we need to rest because the intensity was great and we felt the blows.
Jaguares captain Agustin Creevy said he was pleased with the way the team came back to secure the win in Bloemfontein.
"We achieved our goal by getting the win, but we did not play the way we expected to," said Creevy.
"The team was under pressure and played against adversity, but we responded well. We were nervous and that was to be expected.
"The team rallied from a twenty points down because we were convinced that we could win this match."
