Healthy Christmas lunch

The holiday season is upon us and, as per usual, everything focuses on having a good time and completely over indulging. Christmas lunch is a biggie!

But in this day and age, where nutritional shakes have and a miscellanea of dietary supplements have replaced solid foods, the question begs: “Is there still room for a big Christmas lunch?”

The rugby365.com team put their heads together and produced what they though would be perfect for the occasion.

Below you will find a four-course meal designed by our “experts” to save the waistline:

First Quarter:
Liver pate – made with lentils and onions (100 percent vegetarian) nobody will know the difference.
Melba toast

Second Quarter:
Cold cucumber soup/cold potato and leek soup/beetroot soup
Cabbage salad with roasted almonds
Caprese salad

Half-time:

Third Quarter:
Roast turkey
Roast veggies – done in the oven
Roast potatoes – also done in the oven and not Gran’s traditional way
Gravy

Fourth (and most important) Quarter:
Chocolate Mousse – the dairy and cholesterol free kind of course.
Trifle – substitute the cream, it can be done.
Flaming Brandy Pudding with Brandy Butter – no substitute for tradition here!

Post-match analysis:
Herbal teas
Caffeine-free coffee

Enjoy!
